Working in collaboration with veteran sushi chefs, we have created great tasting frozen shari rice that only requires defrosting at room temperature. We have also created a variety of wine vinegars as well as rice vinegar, red vinegar,and black vinegar, for use as sushi vinegar, which allows us to offerflavors that match your tastes.

Special technology developed over many months and years in collaboration with veteran sushi chefs.
Freshly Made
Rapid freezing techniques are used to minimize cellular damage, and this maintains nutritional composition after defrosting. This technique prevents the “white wax effect” that occurs when rice loses moisture content and becomes hard and crumbly like wax model samples, and realizes a fluffy loose shari rice texture no different to that of cooked rice.
Thawing
Natural defrosting takes three hours at 20-25°C room temperature, or if you are in a hurry, 30 minutes under running water.
